Our Story
Great Lakes Brewery was born from a simple conviction: that the best beer and bread come from patience, craft, and a deep respect for the ingredients. Nestled in Cleveland's historic district, we've been pouring small-batch ales, lagers, and stouts alongside fresh, wood-fired loaves for over two decades.
Every batch is brewed in-house using water drawn from the Great Lakes basin — the same waters that shaped this city. Every loaf is baked each morning in our stone hearth oven, using locally milled flour and sourdough starters passed down through generations of Cleveland bakers.

From the Hearth
Every morning at 4 a.m., our bakers begin. Stone-ground flour, wild sourdough starters, and a wood-fired oven — the same rhythms that have shaped Cleveland's food tradition for over a century.
48-hour fermented with our house starter. Crisp crust, open crumb, tangy depth.
Olive oil-rich with fresh rosemary and flaky sea salt. Baked until golden and blistered.
Buttery, spiced, and drenched in cream cheese glaze. A weekend ritual.
Made with our Lake Effect Amber. Chewy interior, coarse salt, paired with Dijon mustard.
